hey, so i got burnt out on this blog rather quickly. my attempts to document EVERY. LITTLE. THING. i ate does not really serve any purpose, it turns out. what i really want to do is be able to reference amazing things i have made. so, with that in mind:
quinoa/apple/pear/black bean salad!
variation on veganomicon’s quinoa, mango, black bean salad.
1 tblsp apple cider vinegar
1 tblsp balsamic vinegar
2 tbsp oil
1/4tsp salt
2 small (cortland?) apples, diced
i large bartlett pear, diced
2 cups cooked red quinoa
1 can black beans, rinsed, drained
delicious!!!
